Black and Orange Heaven!

This vegan dish is a great weeknight meal. When you don’t feel like cooking, this is a great option because you dump everything in the slow cooker and it does all of the work! The only part that takes a great deal of effort is dicing the sweet potato. That part is ROUGH for me! But since I’m a frugal chick, I’d rather not pay extra for the already diced kind. Sweet Potato & Black Bean Chili

  • Slow Cooker

Ingredients
  

  • 1 sweet potato large
  • 1 red bell pepper
  • 15 oz canned black beans
  • 28 oz diced tomatoes fire roasted is best
  • ¾ c water or vegetable broth
  • 1 tbsp chili powder
  • 1 tsp garlic powder
  • 1 tsp cracked black pepper
  • 1 tbsp Tony Chachere's Creole Seasoning
  • 1 tsp Italian seasoning
  • 1 tsp cumin

Instructions
 

  • Peel and dice the sweet potato
  • Add the diced sweet potatoes, black beans, tomatoes, water, spices to the slow cooker
  • Cook for 5-6 hours on low or 3-4 hours on high, stirring occasionally
  • If a thicker chili is desired: Halfway through cooking, remove 1 cup of the ingredients, mainly beans and potatoes, from the slow cooker into a small bowl. Using a fork or potato masher, mash the ingredients and stir them back into the slow cooker. Repeat until the desired thickness is achieved.

    The name “Black and Orange” at first sight reminded me of prison, but i love the name! Who knew sweet potatoe and black beans go together. Very simple recipe, yet nutritious.
