This vegan dish is a great weeknight meal. When you don’t feel like cooking, this is a great option because you dump everything in the slow cooker and it does all of the work! The only part that takes a great deal of effort is dicing the sweet potato. That part is ROUGH for me! But since I’m a frugal chick, I’d rather not pay extra for the already diced kind. Sweet Potato & Black Bean Chili

Ingredients
- 1 sweet potato large
- 1 red bell pepper
- 15 oz canned black beans
- 28 oz diced tomatoes fire roasted is best
- ¾ c water or vegetable broth
- 1 tbsp chili powder
- 1 tsp garlic powder
- 1 tsp cracked black pepper
- 1 tbsp Tony Chachere's Creole Seasoning
- 1 tsp Italian seasoning
- 1 tsp cumin
Instructions
- Peel and dice the sweet potato
- Add the diced sweet potatoes, black beans, tomatoes, water, spices to the slow cooker
- Cook for 5-6 hours on low or 3-4 hours on high, stirring occasionally
- If a thicker chili is desired: Halfway through cooking, remove 1 cup of the ingredients, mainly beans and potatoes, from the slow cooker into a small bowl. Using a fork or potato masher, mash the ingredients and stir them back into the slow cooker. Repeat until the desired thickness is achieved.
