Peel and dice the sweet potato
Add the diced sweet potatoes, black beans, tomatoes, water, spices to the slow cooker
Cook for 5-6 hours on low or 3-4 hours on high, stirring occasionally
If a thicker chili is desired: Halfway through cooking, remove 1 cup of the ingredients, mainly beans and potatoes, from the slow cooker into a small bowl. Using a fork or potato masher, mash the ingredients and stir them back into the slow cooker. Repeat until the desired thickness is achieved.
