Peel the carrots and cut the ends off. You can match the size of the hot dog buns or if you're like me, you'll leave a little extra length
Boil carrots in the soy sauce, water, maple syrup, ketchup, liquid smoke, A1 for 10 minutes uncovered
Boil for another 10 minutes, this time covered. Ocasionally poking the carrots with a fork or knife to check that they're not too soft
Turn off heat and let the carrots sit in the pot with the sauce for 5 minutes
Place a few paper towels on top of a plate or serving dish
Remove the carrots from the pot and place them the plate with paper towels for the carrots to drain for at least 3 minutes
Top your dogs with toppings of your choice. I've used: coleslaw, cheese, fresh kale, ketchup, mustard, relish
