The Easiest Vegan Spaghetti

Ingredients
- 1 tsp olive oil
- 1 tbsp minced garlic
- ¼ cup chopped bell peppers frozen works well
- ¼ cup chopped onions frozen works well
- 6 oz Trader Joe's Soy Chorizo (1/2 package)
- 9 oz Trader Joe's Hearts of Palm Pasta (1 box)
- ¾ jar Your vegan pasta sauce
- 1 tsp Italian seasoning
- 1 tsp garlic powder
Instructions
- Heat oil in a large skillet on medium heat
- While the oil is heating, cut half of the soy chorizo and remove the casing (thin film around the chorizo). Set aside. Save the other half for future use.
- Chopp the peppers and onions. Use food processor to quicken the process
- Add garlic, peppers, and onions to skillet and heat for 3 minutes or until soft
- Add chorizo to the skillet with the veggies. Separate so that it resembles ground meat. Stir frequently to avoid it sticking to the skillet and heat for 2 minutes
- Add pasta sauce along with seasonings and simmer 5 minutes
- Add hearts of palm pasta and continue to simmer for 5 minutes
- Plate, serve, and enjoy!
