The Easiest Vegan Spaghetti

Equipment

Ingredients
  

  • 1 tsp olive oil
  • 1 tbsp minced garlic
  • ¼ cup chopped bell peppers frozen works well
  • ¼ cup chopped onions frozen works well
  • 6 oz Trader Joe's Soy Chorizo (1/2 package)
  • 9 oz Trader Joe's Hearts of Palm Pasta (1 box)
  • ¾ jar Your vegan pasta sauce
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder

Instructions
 

  • Heat oil in a large skillet on medium heat
  • While the oil is heating, cut half of the soy chorizo and remove the casing (thin film around the chorizo). Set aside. Save the other half for future use.
  • Chopp the peppers and onions. Use food processor to quicken the process
  • Add garlic, peppers, and onions to skillet and heat for 3 minutes or until soft
  • Add chorizo to the skillet with the veggies. Separate so that it resembles ground meat. Stir frequently to avoid it sticking to the skillet and heat for 2 minutes
  • Add pasta sauce along with seasonings and simmer 5 minutes
  • Add hearts of palm pasta and continue to simmer for 5 minutes
  • Plate, serve, and enjoy!
