Heat oil in a large skillet on medium heat
While the oil is heating, cut half of the soy chorizo and remove the casing (thin film around the chorizo). Set aside. Save the other half for future use.
Chopp the peppers and onions. Use food processor to quicken the process
Add garlic, peppers, and onions to skillet and heat for 3 minutes or until soft
Add chorizo to the skillet with the veggies. Separate so that it resembles ground meat. Stir frequently to avoid it sticking to the skillet and heat for 2 minutes
Add pasta sauce along with seasonings and simmer 5 minutes
Add hearts of palm pasta and continue to simmer for 5 minutes
Plate, serve, and enjoy!
