Ingredients
- 1 tsp olive oil
- ¼ yellow onion
- ½ red bell pepper
- ½ green bell pepper
- ground cumin to taste
- Goya Adobo all purpose seasoning to taste
- 8½ oz rice
- 1 c salsa chunky
- 1 can black beans rinsed and drained
- 1 can corn with juice
- toppings of choice
Instructions
- Cook the rice according to instructions
- Heat oil in a medium pot
- Saute the peppers and onion for about 3 minutes or until onion is translucent
- Add cumin and Goya seasoning
- Add salsa, beans, corn and allow to simmer for 10 minutes
- Top rice with bean mixture and additional toppings of your choice
