Ingredients
  

  • 1 tsp olive oil
  • ¼ yellow onion
  • ½ red bell pepper
  • ½ green bell pepper
  • ground cumin to taste
  • Goya Adobo all purpose seasoning to taste
  • oz rice
  • 1 c salsa chunky
  • 1 can black beans rinsed and drained
  • 1 can corn with juice
  • toppings of choice

Instructions
 

  • Cook the rice according to instructions
  • Heat oil in a medium pot
  • Saute the peppers and onion for about 3 minutes or until onion is translucent
  • Add cumin and Goya seasoning
  • Add salsa, beans, corn and allow to simmer for 10 minutes
  • Top rice with bean mixture and additional toppings of your choice
